Judges described the Le Gruyère AOP surchoix, entered by Swiss cheesemaker Vorderfultigen and affineur (refiner) Gourmino, as a "really refined, hand-crafted cheese" that melts on the tongue and has notes of herbs, fruits and leather. "A cheese with a lot of taste and bouquet." A matured cheese, the gruyère is slightly crumbly and made from raw cow's milk.
The cheese production centres located at Langtang, Gatlang, Chandanbari and Dhunchelek have resumed their production from June 15 and 2,121 kilogrammes cheese has been produced.

RASUWA, Dec 15: Cheese (yak) around Rs 59 million was produced in the past seven and half months in Rasuwa, a mountainous district. Such an amount of cheese was produced from four cheese production centres based in different locations.
